Liver
can be difficult for some people to eat because of its texture and
smell. Here is an interesting way to server it up and convince
non-enthusiasts to give it a try.
Ingredients

1/2 kilo liver, cut into thin strips
- 1 cup flour
- 1 medium onion
- 3 cloves garlic, diced
- 1/2 tablespoon ground ginger
- 1 tablespoon light soy sauce
- Black pepper, ground
- Salt to taste
- Oil for frying
Method
- Place the liver pieces on a plate and sprinkle with salt and pepper according to tast
- Spread the flour on a separate plate and lightly dredge the liver pieces in it until all of them are coated on all sides
- Heat some oil in a pan and, on medium heat, fry the liver pieces until both sides are light brown, about 1 minute per side
- Set the liver pieces aside
- In a separate frying pan, saute the onions until almost brown
- Add ginger and garlic and stir constantly until the onions are brown
- Add the tomatoes, some water and the soy sauce, and turn the heat to medium
- Simmer until the tomatoes are soft and mushy then stir to make a sauce
- Add the cooked liver pieces to the pan, and stir on low heat until the liver pieces are coated in the sauce
- Serve with mashed potatoes
